Sunshine Pie- Alcohol Free Cocktail


Just recently I found in 'Homesense' a bottle of 'Lemon Pie' flavoured syrup and just had to buy it! I had in my head visions of delicious cocktails in the garden, sun on my face and lots of ice clinking in the glass. So over the weekend, whilst spending some good times with family, I created this little concoction of deliciousness to use my new favourite ingredient. If you can't find the Lemon Pie syrup, this cocktail is also delicious without it.

Ingredients (Makes 6 drinks)

  • 3 Ruby Grapefruit

  • 3 Lemons (plus one for slicing)

  • A large bunch of fresh Thyme

  • A large bunch of fresh Mint

  • 9 tbsps Monin Lemon Pie flavoured Syrup

  • A large bottle of Sparkling Water

  • Ice

Directions

Squeeze the juice of the grapefruit and lemons into a jug, and add a generous helping of sprigs of fresh thyme and a good handful of mint leaves. Add the Monin syrup and stir well, leaving to infuse for about an hour so that the herbs release their goodness.

1/2 fill a cocktail glass or jar with ice cubes, and fill glass 3/4 full with the cocktail mix, topping up with sparkling water and adding a slice of lemon and a sprig of Thyme to the glass. (You could add a single measure of Vodka or Gin at this point too if you want to make it boozy!) Best served in the sun, with a cutie straw, and enjoy the taste of the citrus pie in a glass! YUM!

This will become a regular feature in our house this summer!
