Halloumi Salad with Strawberry Vinaigrette


I've found of late that by the time it comes round to making an evening meal, I don't feel much like a big plate of dinner. So I thought this recipe sounded like the perfect balance of yum, in a meal that didn't involve too much hard work, and wasn't going to make me feel bloated all evening. This recipe is from 'Get the Glow' by Madeleine Shaw, which was recently included in our list of current top 5 books for wellbeing.

Halloumi salad with Kale and Strawberry vinaigrette-

Ingredients:

2 tbsp of Coconut oil

1/2 red Onion, thinly sliced

1 bunch of Kale, sliced lengthways into strips

6 Strawberries, cut into tiny chunks

2 tbsp water

juice of 1 Lemon

1 tbsp cider vinegar

1tbsp Olive oil

200g Halloumi, cut into slices

2 tbsp Sesame seeds

Directions:

Madeleine recommends 'massaging' the Kale before using it (sounds naughty!), and says it makes it easier to digest the iron and vitamins in it.

Heat 1 tablespoon of coconut oil in a large wok over a high heat for 1 minute. Add the onion and saute for 3 minutes, then add the Kale and a pinch of salt, and stir fry for another 3 minutes.

Put the strawberries in a pan with the water, lemon juice, vinegar and olive oil and heat over a low heat. Mash down the berries to form a puree, and put this in a jar to cool.

Heat the remaining tablespoon of coconut oil in a prying pan over a high heat, and fry the halloumi for 1 minute on each side.

Pop the kale and halloumi on top, then pour over the dressing and scatter with sesame seeds.
